Vegan Bounty Bars with Arctic Blueberry Powder

  1. 1 cup (around 235ml) light coconut milk

  2. 5 tbsp maple syrup

  3. 4 tbsp coconut butter or creamed coconut (you can make your own coconut cream by placing a can of coconut milk in the refrigerator overnight)

  4. Pinch of salt (Terrasoul Himalayan Pink Salt)

  5. 2 cups (around110g) desiccated coconut (Terrasoul Coconut Shredded)

  6. 1 tbsp Arctic Power Berries blueberry powder

  7. 200g dark chocolate, melted


  1. Pour the milk into a saucepan along with the coconut butter, maple syrup and salt. Heat on low until everything is combined, stir well.

  2. Remove the pan from the heat source and fold in the desiccated coconut and blueberry powder.

  3. Pour the picture into a loaf tin, press it down and cover it with parchment paper. Freeze for 2-3 hours.

  4. Slice the loaf into 12 bars and coat each bar with the melted chocolate.

  5. Freeze the bars for at least 30 minutes to allow the chocolate to set.

  6. Enjoy!
