Coffee Blackcurrant Banana Ice Cream

Ingredients for the nana ice-cream: 

  1. 2 ripe bananas

  2. 4 tbsp milk of choice

  3. 1 tsp instant coffee granules

  4. 1 tsp Arctic Power Berries blackcurrant powder

  5. 1 tbsp cacao nibs (Terrasoul Cacao Nibs)

Blackcurrant cacao drizzle (optional):

  1. 15g cacao butter (Terrasoul Cacao Butter)

  2. 1 tsp Arctic Power Berries blackcurrant powder

  3. 1 tbsp maple suryp

Instructions (nana ice-cream):

  1. Chop the bananas, place them in a freezer bag and freeze until solid (or overnight).

  2. Place the frozen banana chunks into your food processor or blender along with the coffee and milk. Blend on high until completely smooth.

  3. Fold in the blackcurrant powder and cacao nibs into the banana mixture.

  4. Enjoy as is or make an optional blackcurrant cacao sauce to drizzle on top.

Blackcurrant cacao drizzle:

  1. Add the cacao butter and maple syrup to a pan and heat on medium until melted. Stirring continuously. Remove the pan from, turn off the heat, and mix in the blackcurrant powder.

  2. Drizzle the mixture over your ice cream. It will solidify at room temperature creating a delicious crunchy shell.
