Superseed banana bread

What you need:

3 over-ripe large bananas (mashed)

2 cups gluten free flour

½ cup date paste

½ cup Terrasoul coconut sugar

½ cup Terrasoul coconut oil

2 flax eggs (2tbs ground flax seeds + 6tbs water)

1tsp vanilla extract

¼ tsp Terrasoul vanilla powder

1tsp cinnamon

1tsp baking powder

½ tsp baking soda

½ tsp Terrasoul Himalayan pink salt

 

Topping:

2tbs pumpkin seeds

2tbs sunflower seeds

2tbs chopped walnuts

1 tbs Terrasoul chia seeds

Combine topping ingredients and set aside.

 

How to:

  • Pre-heat the oven 176C

  • Make the flax egg and refrigerate for 5 minutes

  • Line a loaf pan with parchment paper

  • Mash the bananas and add the sugar (mix slowly). Add the flax eggs, coconut oil, and vanilla.

  • Mix the dry ingredients separately and slowly add them to the wet ingredients.

  • Pour the mixture into the loaf pan and sprinkle the top with seed mixture.

  • Bake for 45-50 minutes.
